Cajun Injector Zing Smoked Elk Roast

Ingredients:
1 Cajun Injector Electric Smoker
1 (4-6 lb) Elk Roast
1 (16 oz) Jar Cajun Injector Italian Zing Marinade
4 Tbs Louisiana Hot Sauce
2 Tbs Cajun Shake
1 Cup Apple Juice
1/3 Cup of Oak Smoke Pellets
Method:
Set the temperature on the smoker at 275°F and the timer for 8 hours.
Once smoker is ready, inject roast with the marinade using 2 ounces per pound. Generously season the roast with Cajun Shake.
Place roast on a rack in the Cajun Injector Electric Smoker and pour apple juice in drip pan and close door.
Place ¼ cup of oak pellets into wood pellet chute, and ensure that no pellets remain in chute after loading. Once the pellets start to smoke, commence timing the smoking process.
Smoke roast for 4-5 hours or 45 minutes per pound. Let rest 15 minutes before serving.
