Cajun Injector Grilled Tuna
with Grilled Pineapple Salsa

Ingredients:

FISH:
1 ½ pounds tuna
½ cup Cajun Injector Lemon Butter garlic
1 tablespoon Cajun Injector Cajun Shake
1/3 extra virgin olive oil

SALSA:
2 cups grilled pineapple
1/3 cup chopped red onion
1/3 cup chopped red pepper
1/3 cup chopped yellow pepper
1 tablespoon minced jalapeño
2 tablespoons chopped cilantro
1 tablespoon extra virgin olive oil
1 teaspoon Cajun shake
1 teaspoon Louisiana Hot Sauce

Method:

Cut fish into 4 (6oz) steaks and place in a pan.

Combine Lemon butter garlic, Cajun shake, and olive oil and marinate the fish for about 10 minutes.

Place on medium heat grill and cook for about 10-12 minutes or until fish is firm. Turn as necessary to get grill marks and continue basting with marinade.

For salsa, in a medium size mixing bowl combine all ingredients and mix until incorporated and let stand at room temperature for about 15 minutes while the fish is cooking.
