Cajun Injector Roasted Garlic & Herb
Deep-Fried Turkey Breast

Yields: 4-6 servings
Ingredients:
1 turkey breast
(3-3½ pounds)
3 tablespoons Cajun Injector Cajun Shake
1 16 oz jar Cajun Injector Roasted Garlic & Herb
2 gallons Cajun Injector Cottonseed frying oil
Method:
Place the turkey in a pot that you are going to use to fry in. Add enough water to cover the breast with about 3 inches to spare.
Remove the breast from the water and measure the water line. (This determines how much oil you will need in order to fry the breast.)
Pat turkey dry and inject with marinade. You will need about 2-3 oz of marinade per pound of meat.
Season outside of the breast with Cajun shake.
Heat oil to 350 degrees F.
When oil is heated, slowly lower the breast into the hot oil. Fry breast for 3 minutes per pound plus 5 minutes. A 3 lb breast will take approximately 14 minutes.
Carefully pull breast from oil and allow draining slowly.
Let rest for 5-10 minutes.
Carve and serve.
