Elk Burger With Crumbled Blue Cheese

Yields: 4 servings

Ingredients:

1 pound ground elk meat
1 cup Cajun Injector Honey Bacon Bar-B-Q
2 tablespoons Cajun Injector Cajun Shake
1 tablespoon Dijon mustard
1/3 cup chopped shallots
1 tablespoon olive oil
1 egg
1 cup Italian bread crumbs
4 tablespoons blue cheese

Method:

Using a food processor place all ingredients (everything but the elk) and pulse it a couple times until all ingredients are incorporated.

In a small bowl pour all ingredients over the elk meat and fold until well blended, for about 2-3 minutes.

Shape meat mixture into 4 patties.

Over medium cook the patties and flip burgers every 2-3 minutes.  Cook for about 15 minutes are until burgers are fully cooked.  If burgers seems to brown very fast, place them off to the side or lower the heat on the grill.
